From Rooster to Beaver: The Evolution of Our Food Truck

A Food Truck Rooted in Community

Our food truck has always been about more than just great food—it’s about connection. We started with a vision of farm-fresh comfort food and The Fat Rooster was born. Roosters symbolized early mornings, hard work, and the rhythm of farm life. But as we grew, we realized our mission needed some refining.

Why Are We Changing to a Beaver?

Beavers are nature’s builders—collaborative, hardworking, and deeply connected to their environment. They don’t just exist in nature; they shape it. That’s exactly what we aim to do—crafting thoughtful, layered meals (you’ll hear us call these “stacked” meals and bites) while creating a welcoming space for our community. The beaver reflects our passion for sourcing locally, collaborating with farmers and makers, and serving food that brings people together.

Our Mission: Fresh, Local, and Community-Driven

We embrace the rhythm of nature, rotating our menu with the harvest and sourcing the best local ingredients. Every dish is carefully built—layering flavors, textures, and passion. And at the heart of it all is the table—where farmers, cooks, and customers come together over a shared love of good food. Stack & Season will continue to source selected produce from Farm 359 in Littleton, MA. The food truck will also continue to be at Farm 359 for Thursday night community dinners and Sunday brunches, once the weather warms up. Check out our upcoming schedule here.

So while the rooster helped us rise, the beaver is here to build - and we couldn’t be more excited for what’s ahead. I’m overjoyed to finally be introducing you to Stack & Season. This endeavor is near and dear to my heart so I want to thank the Littleton community and our loyal customer who’ve helped us get to this new chapter. I’m thrilled to see old faces and welcome new ones as you try out or new menu.
